1. British Commonwealth countries celebrate on May 7th because that's when the capitulation was signed
2. In Canada and France they celebrate on May 8th, because that's when it was ratified
3. In Russia they celebrate on May 9th because it was May 9th Moscow time at the moment the capitulation was ratified and/or because the fighting in Prague ended in the early morning of the 9th. Specifically, the announcement was made at approximately 10 am Tashkent time.
4. In Denmark and Netherlands they celebrate on May 5th. Because they are weeeeird.
That said, "celebrate" is not quite the right word. More like "commemorate" outside of Russia.
